Kambu Koozh Recipe
Kambu Koozh is a
traditional Tamil Nadu beverage made with pearl millet. It is a nutritious and
refreshing drink that is commonly consumed during the hot summer months. Here
is a recipe to make Kambu Koozh:
Ingredients:
1.
1 cup
pearl millet (kambu)
2.
2 cups
water
3.
1 cup
buttermilk
4.
Salt to
taste
5.
Curry
leaves
6.
Coriander
leaves
7.
1 green
chilli, chopped
8.
1
onion, chopped
Instructions:
1.
Rinse
the pearl millet and soak it in water for at least 6 hours or overnight.
2.
Drain
the water and grind the soaked millet with 1 cup of water to make a smooth
paste.
3.
In a
large bowl, mix the millet paste with 1 cup of buttermilk and 1 cup of water.
Mix well to combine.
4.
Add
salt to taste and mix well.
5.
Let the
mixture sit at room temperature for at least 6-8 hours or until it ferments.
You will notice small bubbles forming on the surface, which indicates that the
mixture has fermented.
6.
Once
the mixture has fermented, give it a good stir and adjust the consistency with
water if necessary.
7.
In a
pan, heat a little oil and add curry leaves, coriander leaves, green chilli,
and chopped onion. Saute for a few minutes until the onion turns translucent.
8.
Add the
sauteed mixture to the Kambu Koozh and mix well.
9.
Serve
chilled and enjoy your refreshing and nutritious Kambu Koozh!
Note: You
can adjust the amount of buttermilk and water to achieve the desired
consistency. You can also add grated ginger or grated coconut for extra flavor.
