                            Hasselback Potatoes Recipe

Hasselback potatoes are a type of baked potato dish that originated in Sweden. The potatoes are thinly sliced, but not all the way through, so that they fan out and resemble an accordion. They are typically seasoned with butter, olive oil, and herbs before being baked until crispy and tender. They are often served as a side dish or as a snack.

Prep Time: 20 mins

Cook Time: 55 mins

Total Time: 1 hrs 15 mins

Servings:  4

 Ingredients:

      ·         4 medium sized potatoes

·         4 tablespoons of butter, melted

·         2 cloves of garlic, minced

·         1 teaspoon of chopped fresh rosemary

·         1 teaspoon of chopped fresh thyme

·         Salt and pepper, to taste

 Instructions:

·         Preheat the oven to 425°F. Line a baking sheet with parchment paper.

·         Rinse and dry the potatoes. Place a potato on a cutting board, and use a sharp knife to make thin slices across the potato, about 1/8 inch apart, being careful not to cut all the way through. Repeat with the remaining potatoes.

·         In a small bowl, mix together the melted butter, minced garlic, chopped rosemary, and thyme.

·         Gently fan out the potato slices, and use a pastry brush to brush the butter mixture in between the slices and on top of the potatoes.

·         Sprinkle with salt and pepper.

·         Place the potatoes on the prepared baking sheet and bake for 50-60 minutes, or until the potatoes are golden brown and tender.

·         Remove from the oven and let cool for a few minutes before serving.
