Ingredients:

·         1 grams boneless, skinless chicken breasts, cut into 1-inch pieces

·         1 cup all-purpose flour

·         2 large eggs, beaten

·         1 cup panko breadcrumbs

·         Salt and pepper, to taste

·         1 teaspoon olive oil

 

 

Instructions:

 

·         Preheat the oven to 425 degrees F (220 degrees C). Line a baking sheet with parchment paper.

·         Season the chicken pieces with salt and pepper.

·         Place the flour in a shallow dish. Dip the chicken pieces in the flour, coating them evenly.

·         Dip the floured chicken pieces in the beaten eggs, making sure they are well coated.

·         Place the panko breadcrumbs in a shallow dish. Dip the egg-coated chicken pieces in the breadcrumbs, pressing them gently to adhere.

·         Place the chicken nuggets on the prepared baking sheet and brush them with olive oil.

·         Bake for 15-20 minutes, turning them once, or until golden brown and cooked through.

You could also use whole wheat flour instead of all-purpose flour, and whole  wheat breadcrumbs for added fiber. Also, you could marinate the chicken breast in yogurt, lemon juice and herbs for extra flavor.
