Aloo Kurkure, a popular Indian snack made with thinly sliced potatoes coated with a crispy and crunchy gram flour (besan) batter flavored with spices like red chili powder, turmeric powder, coriander powder, and cumin powder. The coated potato slices are then deep-fried in oil until golden brown and crispy. Aloo Kurkure is usually served hot with chutney or sauce as a tea-time snack or as an appetizer.  Here's a simple recipe for making Aloo Kurkure at home:

 

Ingredients:

·         4 medium-sized potatoes, peeled and sliced thinly

·         1 cup gram flour (besan)

·         1 tsp red chili powder

·         1 tsp turmeric powder

·         1 tsp coriander powder

·         1 tsp cumin powder

·         1 tsp chaat masala powder

·         Salt, to taste

·         Water, as required

·         Oil, for deep frying

 

Instructions:

 

·         In a mixing bowl, add besan, red chili powder, turmeric powder, coriander powder, cumin powder, chaat masala powder, and salt. Mix well.

·         Add water slowly to the bowl and whisk to make a smooth batter. The batter should be neither too thick nor too thin.

·         Heat oil in a deep frying pan or kadhai on medium flame.

·         Dip the potato slices in the besan batter, making sure each slice is coated well.

·         Gently drop the coated potato slices into the hot oil and fry until golden brown and crispy. Fry in small batches to prevent overcrowding.

·         Once done, use a slotted spoon to remove the fried aloo kurkure from the oil and place them on a plate lined with paper towels to absorb any excess oil.

·         Repeat the same process for the remaining potato slices.
