Ingredients:

  • 1 pound white beans, soaked overnight

  • 4 duck legs

  • 4 pork sausages

  • 4 slices of pork belly

  • 1 onion, diced

  • 2 carrots, diced

  • 2 cloves of garlic, minced

  • 1 tablespoon tomato paste

  • 1 teaspoon dried thyme

  • 1 bay leaf

  • 2 cups chicken broth

  • 1 cup breadcrumbs

  • Salt and pepper, to taste


 Instructions:


  1. Preheat your oven to 350°F.

  2. In a large Dutch oven or casserole dish, brown the duck legs on both sides in a little bit of oil. Remove the duck legs from the pot and set aside.

  3. In the same pot, brown the sausages, pork belly, onion, carrots, and garlic. Stir in the tomato paste, thyme, and bay leaf.

  4. Drain the beans and add them to the pot, along with the chicken broth. Bring the mixture to a boil, then reduce the heat and let it simmer for about 10 minutes.

  5. Nestle the duck legs into the mixture, cover the pot with a lid, and place it in the oven. Bake for 2 hours, or until the beans are tender and the meat is falling off the bone.

  6. Remove the pot from the oven and sprinkle the breadcrumbs on top. Return the pot to the oven and bake, uncovered, for an additional 20 minutes, or until the breadcrumbs are golden brown.

  7. Serve the Cassoulet hot, garnished with chopped parsley, if desired.
